Don't know about the tadpole, but your other 2 "?"'s are correct guesses.

Fantastic photos!
Especially those when the sunlight allows you to see deep into the water revealing all sorts of little critters!

The palmate newts are correct. I believe that T. vulgaris does not occur in Southern France. Regarding the tadpoles I believe you are also correct. But that's just based on size and appereance.

Looks like you had a good time!
